I used this recipe after trying others (one from Martha Stewart, even!) and the Smitten Kitchen one worked the BEST! However, I used the full amount of vanilla, and they tasted too vanilla-y...you may want to drop that amount a bit. Just a suggestion!

i made these awhile back. there was the cutest article in gourmet (i believe) about the writer getting homemade marshmallows from her boyfriend which only sealed the deal on marriage forever. homemade marshmallows are pretty darn good.

I recently tried a cake from the site and it was a hit (http://www.hitherandthither.net/2009/11/thanksgiving-for-two.html). Maybe these are next...
My mum always made us homemade marshies (as we called them) when we were kids. I could inhale a whole batch within a few days. She's coat them in toasted coconut to stop sticky fingers. Merry Christmas!
i just made 200 bags and sold them at a local christas bazaar. once you get the hang of it, super easy. but she's right on smitten kitchen: don't try to scrape the bowl or it will get messy. i used a ton of vegetable oil on my pan and found that a pizza cutter is easiest. have fun and good luck!
i just made these (right before your post)! i'm giving my friends homemade marshmallows and starbucks gift cards for christmas. i added cocoa powder to make them chocolate flavored. i used scissors to cut into cubes, which worked well.
Do NOT use a hand mixer to make this! I tried last year, and the mashmallow got fluffy so fast, it started to "climb" the mixer's feet and next thing I knew *poof*, sparks flew, my mixer blew up, and my mashmallows smelled like electrical fire. They went in the trash. :-(
i found my recipe on ready made and it was so easy! it also gave other flavor options like this: For peppermint marshmallows: 1 tsp peppermint flavor 1 ½ tsps vanilla extract
For vanilla marshmallows: 2 tsps vanilla extract
For pumpkin-pie-spice marshmallows: 1 tsp vanilla extract 1 tsp ground cinnamon 1 tsp ground ginger Pinch of ground nutmeg Pinch of ground cloves

ReplyDeleteWe just posted about peppermint marshmallows from the Baked cookbook. They're delicious. The peppermint ones are wonderful in hot chocolate.
